Val has developed and taught 20+ courses in the Sustainable Food & Agriculture Associate Degree Program at Northeast Wisconsin Technical College in Green Bay. She has been an organic, grass-based dairy and livestock farmer for over 30 years. She has a Master’s Degree in Agronomy from the University of Wisconsin Madison.
Val co-owns and operates Full Circle Community Farm near Green Bay Wisconsin growing organic, grass-fed beef, and pastured pork. This 260-acre farm has been in the family for 130 years and the next generation is adding organic vegetables and laying hens to the mix. Val walks the walk; and talks about how farmers can be great environmentalists - how we can feed the world without destroying it.
I am a stay at home mom of three kids, 20, 18 and 16. I have a bachelor's degree in communications and a couple of years later, I completed the requirements to become a dietitian. I have been a registered dietitian since 2001, working in inpatient practice and outpatient practice, which included teaching cooking classes, until 2007. My husband has a job that required frequent moves, so in 2007, after another move and shortly before having my second child, I became a stay at home mom. In the 18 years since then, I have maintained my registered dietitian license by doing continuing education classes focused primarily on growing food, feeding kids and the history and evolution of our food culture. I am passionate about growing & cooking good food, eating well and being a responsible steward of Mother Nature. In my spare time, I love to watch my kids do sports, be outside doing whatever, sew and read.
